Indulge In A ‘Breakfast Of Champions’ With Walnuts

Contrary to popular belief, skipping breakfast throws your body off balance, considering the fact that it needs quick nourishment after a long gap of not having eaten anything.

So, indulging in a deliciously nutritious breakfast each day is the right way to go. In fact, there’s one excellent way to add a nutritious element to the first meal of the day. Indian Style Poached Eggs With Spicy Avocado, Cheese and Walnuts – Chef Anahita Dhondy


  • 3 avocados
  • 1 onion
  • 1 tomato
  • 2-3 green chilies
  • 2 tablespoons coriander leaves, chopped
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 egg
  • 20g California walnuts, crushed


  1. Scoop out the avocado flesh in a bowl and keep aside.
  2. In another bowl, add chopped onion, tomato, green chilies, coriander, olive oil, crushed walnuts, lemon juice, and salt and pepper.
  3. Mix it all together with a fork or a whisk. Keep in the fridge to chill.
  4.  In a pot, add water and get to simmering.
  5. Meanwhile, crack an egg in a small steel bowl greased with a little butter. Season it with salt and pepper and put the bowl in the water.
  6. Cover it with a lid and let it cool for 3 minutes.
  7. For plating, put a large scoop of avocado on the toast. Gently, place the egg on the avocado and season with red chili if you like.

Spinach Pancakes with Cottage Cheese, Walnuts and Honey


  • 100g oat flakes
  • 125ml milk
  • 1 tablespoon vanilla extract
  • 40g spinach
  • 100g California Walnuts


  • Honey
  • Cottage cheese
  • California Walnuts


  1.  Mix all the ingredients into the blender, until smooth
  2. Spread some butter on a saucepan and olive oil. Pour some batter on the pan. Cook the pancake until it begins to bubble, do the same with the other side for two minutes more. Prepare pancakes from the remaining batter.
  3. Serve it accompanied with cottage cheese, walnuts, and honey.

Strawberry, Walnut & Date Smoothie


  • 200g strawberries, halved
  • 50g California Walnuts, plus extra to serve
  • 3 pitted dates, roughly chopped
  • 100g natural yogurt
  • 100ml milk


  1. Place all the ingredients in a smoothie maker or blender and blitz until smooth. Pour into 2 glasses.
  2. Serve sprinkled with extra chopped walnuts.
